Hi everyone!
Next week I want to look at two different GSX1100g bikes. There apparently is little information about it on the internet.
Are there any specific things I have to look out for? I already found out that the collector is a weak point.
Also, what is the average fuel consuption of a bike like this?

We have a detailed list of what is worth to look at if you want to buy a used G. It is in german, I don't know if you can read it. Feel free to ask if you don't understand anything.
Fuel consumption.... well, it depends. With well maintained stock carbs 6 liters are possible and if you use the power, up to 8-10 liters are possible. Worn out carbs can raise the consumption above 10 liters.
Equipped with Bandit carbs it consumes from 5 to 8 liters but then you use every single horse.

From what I've read it's quite the gas-guzzler! That's really too bad. :/

It's not fair to call it gas-guzzler, remember when this heavy-weight bike was planned and constructed. At this time the values mentioned above were absolutely normal. In 2003-2004 I owned a GSX1400, even with fuel injection and a lower weight it used to consume nearly the same amount of fuel.
